Easy Pumpkin Spice Cookie

Now that fall is upon us, you see cans of pumpkin going on sale all over. If you're like me, you eye these cans each year wanting a new (or even a recipe period) so you can do something with pumpkin. 

Last year, one of my coworkers made these cookies and they were delicious. When I asked her for the recipe, I couldn't believe how easy it was to make.

I hope you try these cookies and they become a fall favorite in your home too. Oh and in the near future I'm going to try and make these cookies with pecans or white chocolate chips and will let you know how they turn out.

For this recipe, you'll need:
1 box of spice cake mix
1 15 oz can of pumpkin
1/2 bag of chocolate chips (or you can leave them out)

Directions:
Preheat your oven to 350 degrees. Pour the cake mix into a bowl, add pumpkin and mix together. At first you'll be asking yourself if you missed part of the ingrediants because it looks like there is too much cake mix for the pumpkin, but trust me, it all comes together. Grease a cookie sheet and portion out the cookie mix onto your cookie sheet. I use a 1 inch scoop. Bake for 13-15 mins and enjoy!

Makes approximately 3 1/2 dozen cookies.
