Budget Friendly Thanksgiving Menu
Turkey and gravy (done by my mom. Thanks! :))
Mashed potatoes--$1.75
1 5 lb bag of potatoes--$1 (I got a 10 lb bag on sale for $1.99)
2 cups of milk--.50
1/2 stick margarine--.25
salt to taste
Corn Souffle--$1.77
2 boxes of Jiffy cornbread mix--$1.00
1 egg--.15
1/2 cup of milk--.12
1 can of cream corn--.50
Mix ingredients together and place in a baking dish. Bake at 350 for approximately 30 mins.
Marshmallow Sweet Potatoes--3.35
2 large sweet potatoes--$2.00
1/2 cup sugar--.08
2 tablespoon margarine--pennies
1/2 cup milk--.12
1 egg--.15
1/2 teaspoon cinnamon
1/2 bag of marshmallows--$1.00
Brussel Sprouts with bacon--$6.00
2 1 lb bags of frozen brussel sprouts (thawed)--$4.00
1/2 lb of bacon--already had on hand
2 cans of chicken stock--$2.00
1/2 an onion--already had on hand
Brown the bacon and set aside (leave bacon grease in the pan ;) ). Saute the onions until translucent, remove. Place thawed brussel sprouts into pan and brown. Add chicken stock to brussel sprouts. Once the brussel sprouts have become tender, add onions and mix together. Remove to serving dish and sprinkle pieces of bacon on top.
Stuffin Muffins--$4.00
Cornbread bought from store--$2.00
1/2 cup of dried cranberries--already had on hand
1 granny smith apple--$1
1 can of chicken stock--$1
1/2 onion and 2 stalks celery--have on hand
salt and pepper to taste
Cut cornbread into 1 inch cubes. Cut apple into 1/2 inch pieces. Dice onions and celery. Mix ingredients together and add cranberries. Add chicken stock until mixture is moist. Fill muffin tins with stuffing and place into 350 degree oven for approximately 15 mins or until brown.
